Cucumber soup

Traditional Polish cucumber soup

Ingredients: 

  • 1,5 l of any broth 
  • 1 bigger carrot
  • 1 small onion
  • 3 potatoes
  • Jars of sterilized cucumbers
  • 150 g 18% cream
  • Dill
  • Pepper
  • Salt
  • You can add a little bit of bacon 

Instructions: 

Glaze the finely chopped onion on the butter. Add chopped carrot and mix it for a while (about 3 minutes). Then pour hot broth and bring to a boil. Cover with a lid, and simmer on low heat for about 5 minutes. Then add diced potatoes as well as diced sterilized cucumbers, which you can fry in a pan with a little bacon for a better taste (you can also pour a little infusion of sterilized cucumbers into the soup). Then add the cream (formerly mixed sideways with a little broth) and cook for a while until the potatoes and carrots are soft. Season with dill, salt and pepper and serve. 

Tip: If you prefer cream soups, you can mix everything before serving.
