Cold beetroot soup
Ingredients:
- 1 piece of larger beetroot
- 1 smaller salad cucumber
- 1 bunch of radishes
- 2 cups of kefir or sour cream, or a combination of sour cream and white yoghurt
- Water
- Boiled eggs
- Dill
- Spring onion
- Pepper
- Salt
Process:
First cook the beetroots (washed and unpeeled). Then cut it into small pieces or roughly grate it, put it in a pot, pour water over it, add sliced radishes, diced cucumber, spring onion, dill and mix kefir or sour cream (or sour cream with white yoghurt). Season to taste with salt, pepper and put it into the fridge. Let it chill 1-2 hours. Garnish the cold soup on a plate with a boiled egg.
Tip: Try to add sliced baked potatoes.
