Chicken Adobo

WHAT IS ADOBO?

Adobo from the Spanish "adobar" - marinate) is a very popular food in the Philippines. The traditional cooking process in Filipino cuisine is marinating meat, seafood or vegetables in vinegar, soy sauce, garlic and black pepper roasted in oil. Filipinos often prepare food with vinegar and salt, mainly to make it last longer in a tropical climate.


Chicken Adobo

Ingredients:

  • 2 kg of chicken of your choice (you can also use pork or beef)
  • 4 teaspoons of white vinegar  (in Philippines they use pineapple vinegar) 
  • 8 teaspoons of soy sauce 
  • 3 leaves of dried baz leaf 
  • 2 cloves of garlic 
  • ¼ l of water (or more if needed)

  • 2 teaspoons of oil

  • 1 can of pineapple

  • Pepper

  • Salt

  • Sugar

Tip: It is possible to add coconut milk. 

Process: 

Mix chicken, soy sauce and finely chopped garlic in a large bowl. Leave to marinate for at least one hour. The longer you marinate the meat, the better.

Pour oil on a heated pan. Once the oil is warm enough, add the marinated chicken and fry (for 2-3 minutes). Then pour in the remaining marinade and add water. Bring to a boil and add the bay leaves and pepper. Let it cook for 30 minutes, or until the meat is soft. Add vinegar and a can of pineapple. Cook, stirring occasionally, for at least 10 minutes. Add sugar and salt, stir and you can serve - preferably with rice.


My small tip which I tried: In the end, I decorated everything with basil and roasted peanuts (people from the Philippines wouldn't do it)

From my own experience, I can say that every Filipino will cook their Adobo differently for you. Some do not give pieces of pineapple and only add pineapple juice, while others cook Adobo without both pineapple and pineapple juice. Some Filipinos add more sugar to make the meat sweeter, others do not give sugar at all and prefer a sour-salty taste. It must also be said that pineapple vinegar, which Filipinos use to prepare this traditional dish, has a completely different taste.
