Maori Boil Up from New Zealand
Ingredients:
- 4-8 bones of pork/pork ribs
- 6 sausages
- 4 big potatoes
- 3 carrots
- cabbage
- big onion
- black pepper
- salt
Tip: you can add bacon, pumpkin, watercress, spinach leaves
Instructions:
Let the bones cook in a large pot. Pour in a sufficient amount of hot water, add sliced cabbage, onion (you can also add bacon), salt, black pepper and bring to a boil. A little later, add the diced potatoes, carrots (or pumpkin) and cook until everything is soft.Mix flour with water and baking powder (I also add chopped parsley). Then form this batter into larger dumplings, add to the pot and let it cook for at least 10 minutes. The total cooking time is approximately 1 hour 45 minutes.
